Soy Braised Lotus Root

Humans must have really been hungry to start eating these roots.  I mean they’re not exactly the most attractive plant and unless properly prepared taste horrible. 300 gm Lotus Root, 2 Tbsp Vinegar, 1/2 cup Sake, 1 cup Soy Sauce, 2 Tbsp Hondashi, 3 Tbsp Corn Syrup, and 3 Tbsp Sesame Seeds.

Peel and soak in water with vinegar.

Slice.

Place into pot with water and vinegar.

Place into pot with water and vinegar and bring to boil.

Add soy sauce, mirin, sugar and sesame.

Add soy sauce, sake, corn syrup and hondashi.  Reduce.

Reduce and top with sesame seeds.

Top with sesame seeds.
